Ingredients
Large (10-12 inch diameter) flour tortillas (1 or 2 per person)
1 can or 1 cups of refried beans or drained black beans
1 jar taco sauce or salsa
1 cup sliced mushrooms
1 cup sliced bell peppers
1 medium onion, chopped
1 pound extra firm tofu, cubed
1 teaspoon olive oil
1 finely chopped jalapeno pepper (optional)
2 cloves garlic, minced (optional)
Salt for taste

Directions
1. Heat the oil in a large frying pan or wok over medium heat.
2. Place the tofu, mushrooms, peppers, onion, and garlic (if desired) in the pan
3. Cook for five to ten minutes, stirring occasionally.
4. While vegetables are cooking, heat beans in a saucepan over medium heat, stirring frequently to keep beans from sticking, for four or five minutes or until hot.
5. Line up the tortillas and roll up the burritos.
6. Place a spoonful of beans, a spoonful of the tofu and vegetable mixture, and a spoonful of salsa in the middle of the burrito,
7. Fold in about two inches of the top and bottom and roll the burrito from one side.
8. Don't put too much stuff in the burrito or it will be a mess.
9. Makes 8 to 10 burritos.
